Originating from the city of metalwork, Tsubame-Sanjo, this exceptional blade seamlessly blends natural beauty with ultimate sharpness. It unfolds a grand narrative that depicts the fusion of nature and technology. Conceived under the concept of “bringing something that wasn’t there before to you,” this product became a reality through the collaboration of two artisans: a blade craftsman with a century-long history and a handle artisan dedicated to preserving Japan’s traditional culture.

Crafted by the Hinoura Hamono Koubou (日野浦刃物工房), the black-finished blade utilizes white paper No.2 steel (core material) and original special steel (cladding material). The design features a black oxidized coating that vividly resembles the process of lava cooling and solidifying. The handle incorporates the ‘Resin Octagonal Pattern’ from Wasabi Japan (株式会社和佐美) , a resin workshop. Embracing the philosophy of “symbiosis,” resin octagonal pattern enhances the inherent beauty of the knife and ensures its functionality as a tool. Meticulous attention to detail is evident in every aspect. Inspired by the theme of natural beauty, the handle, made of unique wood resin, is a fusion of dripping water droplets from wood imagery and olive wood.

This masterful creation is the culmination of the harmonious blend of nature and technology. It not only possesses high quality and exquisite design but also promises a unique experience for the user.

A blacksmith shop with over 100 years of history in the blacksmith town of Sanjo City, Niigata Prefecture.

The blades are made from forge welding to finishing by Mutsumi Hinoura, the fourth generation who inherits the techniques of the third generation Tsukasa Hinoura,
a certified traditional craftsman(伝統工芸士) of Echigo Sanjo cutlery designated by Japan’s Minister of Economy, Trade and Industry.
They are the owner of the brand “Ajikataya (味方屋作)” too , named after the village where they were founded.
