The mirror-polished blade enhances the hammered texture, making each piece not only highly functional but also visually refined and collectible.

This 130mm petty knife is double-edged and suitable for both left- and right-handed users. Compact and lightweight, it’s ideal for precision tasks like peeling, trimming, and preparing fruits or small ingredients. The handle is handcrafted from resin paired with a stainless bolster, with each piece showcasing a unique pattern and coloration. It offers a secure grip and balanced handling for both professionals and collectors.

👤 Takeshi Saji — Master Blacksmith of Echizen Uchihamono

Birth and Background

Born in 1948 in Takefu (now Echizen City), Fukui Prefecture, Takeshi Saji is a third-generation blacksmith. He began his training in local blacksmithing and metallurgy schools, then apprenticed under his father, Saji Haruyoshi (2nd generation). By the age of 18, he was forging knives independently and formally inherited the family tradition.

Certified as a Traditional Craftsman

In 1992, he was officially recognized as a “Traditional Craftsman”  by Japan’s Ministry of International Trade and Industry (now METI). This title is awarded to a select group of artisans who demonstrate outstanding skill and a commitment to cultural craftsmanship.

Workshop and Apprenticeship System

His workshop is located in Takefu Knife Village, Echizen. He collaborates with other renowned artisans, such as Yu Kurosaki, and regularly trains apprentices to preserve and pass on the 700-year-old Echizen Uchihamono (Echizen hand-forged blades) tradition.

Traditional Forging with Personal Innovation

Saji is known for using traditional hammer-forging techniques, crafting blades with visible layers and distinctive hammer marks — a signature of the Echizen style.

He is also recognized for his bold and creative approach to materials, working with advanced steels such as VG-10, R2, and SPG-STRIX. He pioneered the use of multi-metal laminated steel, such as the “Rainbow Damascus,” combining stainless steel with copper, brass, and bronze to create visually stunning patterns like suminagashi (floating ink).

From Outdoor Knives to Kitchen Blades

Originally famed for his outdoor and hunting knives, Saji shifted focus to kitchen cutlery in the mid-2000s. Since around 2007, he has produced a wide range of kitchen knives that emphasize both toughness and artistry.

A Balance of Function and Aesthetics

Saji’s knives are highly regarded for their edge retention, sharpness, and corrosion resistance. Their blade finishes, patterns, and uniquely shaped handles also make them prized by collectors.
